30 days to a Greener Diet - Day 5

Today we are encouraged to try some the less common grains which are becoming more popular. Polenta, bulgar, wheat berries, Quinoa, Spelt.

Bulgar Recipe
Easy Tabbouleh

This recipe is easy-to-make and makes a great side dish to both fish and meat dishes.

SERVINGS
4

INGREDIENTS
2 cups organic flat leaf parsley, minced
1 cup organic fresh mint, minced
1/2 cup fine bulgur
3 or 4 medium tomatoes, cored, seeded and chopped
1 small organic white onion, chopped finely
Dressing:
1/4 cup freshly-squeezed lemon juice
1/4 cup extra virgin olive oil
Freshly ground pepper to taste
Salt to taste

PREPARATION
1. Follow directions for soaking bulgur (about 20 to 30 minutes in water). Drain bulgur very well and squeeze out all water.

2. Combine all ingredients except dressing.

3. To make dressing, whisk together olive oil and lemon juice. Add to salad and season with salt and pepper.

4. Toss before serving

I have some bulgar in my cupboard, when my parsley and mint are ready this spring I will have to try this one.


Wheat Berry Salad with Dried Fruit, Almonds and Chevre


Wheat berries are also the perfect grain to use in pilafs and soups.

SERVINGS
4-6

INGREDIENTS
3 cups water
1 cup uncooked wheat berries
1/2 cup minced shallots
1/4 cup cranberry juice
2 tablespoons vegetable oil
3 tablespoons raspberry vinegar
1 tablespoon balsamic vinegar
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/2 cup coarsely chopped dried cherries
1/3 cup chopped spring onions
1/3 cup almonds, toasted, coarsely chopped
1/4 cup dried currants
1/4 teaspoon freshly ground black pepper
1/2 cup chevre, crumbled

PREPARATION
1. In a medium saucepan, combine the water and wheat berries and bring to a boil. Cover, reduce heat, and simmer 1 hour. Drain and rinse with cold water.

2. Combine shallots, cranberry juice, vegetable oil, vinegars, mustard and salt in a large bowl. Let stand 30 minutes.

3. Add the wheat berries, dried cherries and remaining ingredients except for the chevre to the vinaigrette, and toss to combine. Chill for 4 hours or overnight.

4. Sprinkle with the crumbled chevre, toss and serve.

Smoked Quinoa with Vegan Sour Cream


This quinoa recipe has a distinct smoky flavor that pairs unusually well with the cauliflower, mushrooms, and onions. The vegan sour cream makes it even better. You'll even get the meat-eaters with this one! Submitted by eatingconsciously.

SERVINGS

INGREDIENTS
1 cup cauliflower florets
2 cup baby portobello mushrooms (quartered)
1/2 yellow onion (sliced)
1 cup quinoa
1/4 teaspoon red chili powder
1/2 teaspoon liquid smoke
1/4 teaspoon red pepper (ground, optional)
1 lemon juiced
1/2 block silken tofu
2 cups water
2 tablespoons olive oil
salt to taste


PREPARATION
1. In a large skillet, cook olive oil, cauliflower, mushrooms, and onion over medium heat until onions become translucent. Add chili powder, liquid smoke, red pepper (optional), and any salt. Cover and let sit on lowest heat.

2. Bring water to boil and add quinoa, stirring frequently until all water has absorbed (about 10-15 min). Add quinoa to vegetables and let sit, covered.

3. Put 1/2 block tofu into food processor with lemon juice. Blend until smooth and creamy. This will be your "sour cream".

4. Serve a few scoops of "sour cream" over the smoked quinoa.

Orange Spelt Muffins (Dairy Free)


These whole-grain muffins make a great start to any morning, or you can serve them with the main meal.

SERVINGS
Makes 12 muffins

INGREDIENTS
2 cups spelt flour
1 3/4 teaspoons baking powder
1 1/2 teaspoons orange zest
1/4 teaspoon ground allspice
1/2 teaspoon salt
1/2 cup orange juice
1/4 cup applesauce
1/3 cup vegetable oil
1/2 cup brown sugar
1 1/2 teaspoon vanilla extract
2 eggs

PREPARATION
1. Preheat the oven to 375 degrees F. Oil or butter a 12-cup muffin tin or line with muffin tin liners.

2. Sift or whisk together the flour, baking powder, zest, allspice, and salt in a large bowl.

3. In a medium bowl, beat together the orange juice, applesauce, oil, sugar, vanilla, and eggs until well combined. Stir into the flour mixture until just combined. The batter will be somewhat lumpy.

4. Spoon the batter into the prepared muffin tin and bake for 15 minutes or until a tester comes out clean. Let the muffins rest for 5 minutes, then turn them out onto a wire rack to cool.

I'm not sure I could get my family to eat these salads, but with some careful switching around of ingredients I may just get lucky.

Yesterday I was explaining how I came to realize that I am what I am and how realizing that has really helped me. I was interupted and not able to resume so I would like to continue today. Hopefully I will finish my thought today. When I look around at my habitat and at myself and my family, then I see what I am. It isn't what I like or would like to be, it is what I am. So I decided that if I don't like something then I should change it. I look at a corner and I shake my head. That isn't the me I want to be. I need to do something about it. This resulted in the outside of the fridge being cleared off and cleaned and only put on top of it what makes me feel like me. There are other, plenty of other areas in my home which I need to change to reflect the me I want to be. It was a very helpful theory as it provided me with something which I can do to correct things. I'm not talking about going out and buying new furniture to reflect my particular style, although that would be awesome, because I've already racked up too much debt which is apparently ME. But I will pay off my debts, live frugally and make the changes to my environment, my home, which I can. Keep things clean, cleared and simple to care for. My mom always told me I was a dreamer, and how right she was. Moms are always right. The world could fall down around me and I would keep right on going not even noticing. But I do notice, and it does bother me. I would actually like to find something when I need it, and not have to make a list to remind me what I was doing when I find it so I can finish doing what I was doing.

One thing I have done, to be more of the me I want to be, is my writing. I love to write. I have filled so many journals. What happens is that I will lose my journal and then start a new one. Never finishing anything and leaving really good ideas to rot in the dust. If someone else finds them they always scribble their own notes and tear out pages like it's scrap paper or something. Now I have my journals in one safe place, I'm sure I could find them if I need to. Then I started this blog. This blog is exciting for me. I won't lose my computer. If something happens to it, my blog is safe with blogspot. Comforting. I open it up in the morning and leave it open all day. I write so much more because it is easier for me to type than to write by hand. I write by hand much too slow for my thoughts but I type quickly as quickly as my thoughts. If I write at night I don't have to turn a light on because the computer monitor gives me all the light I need. Writing in a blog makes me feel as though I'm talking to someone, even though the only person yet to read my blog is my oldest daughter. But that's ok.

One thing I'm thinking out loud about that interferes with keeping things the way I like them to be is, other people that live here too. Two small children, toys everywhere and one who is quite creative, creative people, messy creatures really. An older child who works full time and needs to rest inbetween, she is really no hindrance, and a husband who still has not given his tools a home. His tools lay wherever they were last used. Not all of them small tools either. I'm not complaining, really, I'm reaching for an answer. After all, I'm the woman of the home. The official homemaker. So the challenge is mine.

Finishing a project is difficult for me. I have endless knitting projects not quite finished. Crochet projects, decades old and a trunk full of pictures needing frames or in frames needing a spot on the wall etc. But this weekend I did finish a project with the help of my dear husband. I promised my older daughter a headboard fit for a queen over a year ago and now it is finished.
